From September 2016 until February 2017, the University of Applied Sciences Burgenland examined quality criteria considered by consumers when purchasing sparkling wines. The origin is considered the most important quality criterion from in the European Union for wine as a whole and for sparkling wine in particular. The presumed importance of origin was tested for validity against other quality criteria from the consumers’ perspective.
A sample of more than 400 consumers from throughout Austria answered questions in a confirmatory factor analysis framework regarding origin, production, marketing, sensory aspects. Differences in respect to place of purchase, pricing, consumption frequency and the types of sparkling wines, e.g. Sekt, Champagne, Prosecco or mixed cocktail drinks were determined.
